Bergedil Ikan Kembung - Mackerel and Potato Fried Patty |
Here’s the recipe for Mackerel and Potato Fried Patty which I
had with Rice Vermicelli with Chicken Broth for yesterday’s dinner. It is quite
a versatile dish which you have it with rice or own its own. I made extra of these
and finished it off just like that for late supper.
Ingredients:
3 medium size potato – boiled and mashed to small chunks
2 medium size mackerel fish – boiled, deboned and mashed.
4 shallots – pounded finely
1 slice of ginger – pounded finely
1 tbsp. Chinese parsley – sliced coarsely
1 tbsp. scallions – sliced coarsely
Salt and pepper
1 nos. egg – whisk lightly
1 tbsp. flour – whisk with egg
Cooking oil for shallow frying
Preparations:
- Combine all the ingredients except egg mixture and oil. Mix well.
- Divide the mixture into 10 -12 equally sized balls. Form to a firm flat and round patty.
- Cover with egg mixture and fry over medium heat until golden brown. Serve.
