Happy Pancake!

Pancake with butter, honey, strawberry topping and dried strawberry with sliced orange

I love pancake. But we normally being a Malay are not use to have pancake for breakfast. We usually had Nasi Lemak, fried rice or any local rice based breakfast. My son loves pancake. Making pancake for breakfast is one of my effort to make him eat decent home cook breakfast. He is quite an eater but a picky eater.So, this is my version of pancake. I googled for an easy recipe and made some modification. Here is the recipe.



Ingredients:
1 egg
1 cup full cream milk
1 1/4 cup self-raising flour
1/3 cup sugar
1 tsp baking powder

Preparations:

  1. Beat egg and milk for a minute. 
  2. Add all the dry ingredients and mix well. Put aside for an hour or so to let the batter rise. 
  3. Later, beat the batter to a thick consistency. Add more milk if it is too thick. 
  4. Heat a pan or griddle on a medium heat. Grease pan with some butter. Put a dollop of batter and turn the pancake when the upward side bubbling.
  5. Serve with butter, honey, maple syrup or anything you like.
